Raita

Raita

If you need a simple sauce to cool down spicy food (especially curries) have this easy to assemble and make this yoghurt-based condiment.



Raita

1/2 cup plain yoghurt
1/2 cup grated cucumber - seeded first
2 Tbsp finely chopped fresh coriander or mint
salt to taste
2 Tbsp chopped green onion (optional)
1/4 tsp ground cumin (optional)
1/4 tsp ground coriander (optional)
  1. Using a tea towel or muslin cloth, squeeze out water from the grated cucumber.
  2. Mix all ingredients in a bowl and add salt to taste.
    Serve with curry.
